Episode 3 - Avocado Toast

This week I'm joined by our first guest co-host Sheila Murphy, the CEO and Founder of Queens of Society. Join us as we make four variations of Avocado Toast. Simple, delicious and easy to prepare, this recipe is a great appetizer and entree. It’s also kid-friendly, so bring the whole family in to help prepare.

Smoked Salmon Avocado Toast

  • 1 piece thick cut bread

  • 1/2 avocado

  • freshly squeeze lemon juice

  • Kosher salt and freshly cracked black pepper to taste

  • 2 thin sliced smoked salmon

  • thin sliced of red onion

INSTRUCTIONS

  1. Toast the piece of bread until the bread is just golden brown.

  2. For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.

  3. Slather the mashed avocado on top of the toast, followed by the smoked salmon and red onions. 

  4. Serve immediately.

Pico de Gallo Avocado Toast

INGREDIENTS

  • 1 piece thick cut bread

  • 1/2 avocado

  • freshly squeeze lemon juice

  • Kosher salt and freshly cracked black pepper to taste

  • 1/4 cup Pico de Gallo

INSTRUCTIONS

  1. Toast the piece of bread until the bread is just golden brown.

  2. For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.

  3. Slater the mashed avocado on top of the toast, followed by the pico de gallo. 

  4. Serve immediately.

Bacon and Eggs Avocado Toast

INGREDIENTS

  • 1 piece thick cut bread

  • 1/2 avocado

  • freshly squeeze lemon juice

  • Kosher salt and freshly cracked black pepper to taste

  • 1 egg, scrambled

  • 1 piece bacon, cooked

INSTRUCTIONS

  1. Toast the piece of bread until the bread is just golden brown.

  2. For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.

  3. Slater the mashed avocado on top of the toast, followed by the scrambled egg and cooked bacon. 

  4. Serve immediately.

Goat Cheese and Chives Avocado Toast

INGREDIENTS

  • 1 piece thick cut bread

  • 1/2 avocado

  • freshly squeeze lemon juice

  • Kosher salt and freshly cracked black pepper to taste

  • 2 tablespoons goat cheese

  • 1 teaspoon freshly chopped chives

INSTRUCTIONS

  1. Toast the piece of bread until the bread is just golden brown.

  2. For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.

  3. Slater the mashed avocado on top of the toast, followed by the crumbled goat cheese and chopped chives. 

  4. Serve immediately.
